Jackie’s Tasty Tortilla Soup

4 large tomatoes
1 onion
Juice of 1 lime
Handful of tomatillos
1 bell pepper
2 fresh garlic cloves
1/2 bunch cilantro
1 avocado
1 can garbanzo beans, drained and rinsed (optional)
1/2 of small jalapeno
Salt and pepper to taste

Toss everything into the Vita-Mix and blend on high for about 5 minutes, or until you see steam venting from the lid.

Jackie’s Raw Avocado Pesto

1 1/2 avocado (that’s all I had left)
1/2 red onion (mediumish)
1 bunch cilantro sans stems
The tip of one Jalepeno
1 clove garlic
Juice of 3 small limes
Handful of raw cashews
1/2 cup water
Salt & pepper

Throw into vitamix and blend until creamy. Serve over whole wheat pasta. Mmmmm!!!!!

Very flavorful!

    Made these this morning and thought of you 🙂
    Food storage muffins
    1/2 C oil
    1 C brown sugar
    2 C applesauce
    3 C wheat flour, fresh ground is best
    2 tsp cinnamon
    1 1/2 tsp baking soda
    1/2 tsp baking powder
    Stir together and put in lined muffin pan. Bake at 375′ for 20 min.

    Hawaiian Chickpea Teriyaki
    (Happy Herbivore, p.127)

    2 cans chickpeas, rinsed and drained
    1/2 cup teriyaki sauce*
    2 Tbsp Szechuan sauce*
    2 Tbsp raw sugar
    4 c cooked brown rice
    Mango Pineapple salsa

    Combine chickpeas, teriyaki sauce, Szechuan sauce, and sugar in a large frying pan.
    Allow to marinate for at least 5 minutes.
    Cook over medium heat, stirring regularly, until most of liquid has absorbed, about 5 min.
    Spoon over rice and top with fresh salsa.

    Mango Pineapple Salsa

    Mix equal parts chopped mango and pineapple with minced red onion, fresh cilantro, and fresh lime juice.

    * make sure your sauce is free of both MSG and High Fructose Corn Syrup!

    Vegan Whole Wheat Pancakes

    4 cups freshly ground wheat flour
    1 tsp baking powder (Rumsfords)
    1 tsp baking soda
    1 tsp salt
    2 tsp EnerG egg replacer
    2 Tbsp sweetener: agave/honey/maple
    2 Tbsp coconut oil
    1/2 C ground flax
    Dairy free milk of choice: soy/rice/almond/coconut/ect…

    mix dry ingredients together. Add wet, and enough milk to make the right consistency.

    Serve with all fruit jam. Mmmm!!!

    This recipe feeds my entire family with leftovers to spare!

    Napa Cabbage Coleslaw with Miso Dressing
    1 tablespoon yellow miso
    2 teaspoons Dijon mustard
    1 tablespoon honey
    2 tablespoons rice vinegar
    3 tablespoons canola oil
    2 teaspoons sesame oil
    6 cups thinly sliced Napa cabbage (about 1/2 large head)
    3 carrots, grated
    4 green onions, sliced
    1 (5-ounce) can sliced water chestnuts, rinsed and drained
    1/3 cup roasted peanuts or sliced almonds

    This recipe is courtesy of the whole foods market recipe app. I used regular cabbage and left out the last two ingredients. Kiddo and I liked it alright, but my husband told me it was the worst salad he’d ever had. Lol. He has Armenian tastebuds though. The miso soup I served with it wasn’t so great, probably because I didn’t use a recipe, just added tofu, miso and soy sauce to vegetable soup. There are lots of healthy recipes out there for it however.

  6. Vegan Blender Pancakes

    2 cups wheat berries (soak wheat overnight, drain, and then measure out 2 cups)
    1 cup soaking liquid
    1 tsp salt
    1 tbsp baking powder (Rumsford)
    2 tbsp EnerG egg replacer
    1 tbsp pure maple syrup or agave
    1/4 cup soy milk

    Blend wheat berries with soaking liquid until creamy. Add in rest of ingredients and blend. If it is too runny, add a little wheat flour to thicken.

    Pour onto hot griddle. Top with All Fruit jam and berries. Mmmmmm!!! Tasty!

    Becky’s Chocolate Banana Bliss

    2 cups organic soy milk
    2 tbsp organic cocoa powder
    2 tbsp chia seeds
    2 cups greens
    2 frozen bananas
    1/4 tsp stevia or to taste

    Blend and prepare to experience a little slice of heaven!

    Have you tried putting an avocado seed in a smoothie yet? I just saw that in Green Smoothie Revolution and thought it sounded totally weird, yet totally intriguing. I’ll let you know if I get brave enough to try it myself. I think I may make your seven layer dip recipe for our road trip.

    1/2 cup cilantro
    1/2 small onion
    1/2 can black olives
    1 garlic clove, pressed
    1/4 cup tomatillo salsa
    1/2 tsp salt

    Throw all into vitamix. Blend on low until well chopped.

    Fresh Tomatillo Salsa

    1 lb tomatillos
    1 cup packed cilantro
    1/2 lime
    1 tsp salt
    2 garlic cloves, pressed
    1/2 small Jalepeno pepper, no seeds

    Throw all into vitamix and chop on low speed.

    Jackie’s 7 Layer Dip

    1 can refried beans mixed with 1 cup salsa
    Fresh guacamole
    Jackie’s tasty Hummus (make sure guacamole is completely covered my hummus)
    Chopped green onions
    Chopped tomatoes
    Chopped olives
    Chopped cilantro
    Squeeze of lime over top

    Serve with Cajun Lime Tortilla Chips

    Cajun Lime Corn Chips

    White or yellow corn tortillas
    Organic canola oil spray
    Fresh lime juice
    Tony’s Cajun spice

    Lightly spray both sides of tortillas with oil.
    Brush both sides of tortillas with lime juice
    Sprinkle with Tony’s

    Bake at 400* until golden brown and crispy (turning over 1/2 way through)

    Break into chips and enjoy!!

    1/2 blender stuffed tight with spinach
    3 mango halves
    2 cups grapes
    1 orange
    1 banana
    2 cups water
    2 cups ice

    Jackie’s low-fat hummus

    Two cans drained garbanzo beans
    1/4 c water
    1/2 bunch cilantro
    1 med onion
    2 cloves fresh garlic, pressed
    1 lime, juiced
    Salt and pepper to taste
    Handful of tomatillos, if available

    Stick all ingredients into Vita-Mix or food processor. Blend until smooth.

    (These measurements are just approximations. When I make this, I just toss things in until I like the flavor!)

    I like to eat this with my homemade baked corn tortilla chips or veggies.
