Hi, my name is Jackie, and for the next 10 months, until my 40th birthday, I have committed to taking the Vegan Challenge. During this challenge I will eat only plant-based whole foods. I will also eliminate all highly processed and refined foods from my diet. As a lifelong meat and dairy eater, this challenge should, at the very least, prove interesting!
For the past 15 years I have struggled with obesity and have developed an unhealthy addiction to food and sugar. I also have a genetic propensity for diabetes, heart disease, and cancer. As I am now 60 lbs overweight, I know that without radical change, there is a very real possibility that I will develop one of these life threatening conditions.
I will be recording my progress weekly, as well as posting my favorite recipes and tips. To change things up, I will also undertake week-long mini-challenges as I explore some of the more focused vegan diets such as the Raw Food diet and the Green Smoothie diet.
I hope that as I begin to see success, others will find the courage and inspiration to join me on this vegan journey to better health!
