    Hey Jax, I am always inspired by your enthusiasm for new adventures. It is very “catching”. I have started to adapt green smoothies into our diet and love knowing they are getting nutritious vegetables. Not totally sure how nutritious as Thailand offers up different greens than the normal American grocers. It has been fun to experiment though. πŸ™‚ I have also started using the couch to 5 k app for getting started with running. Baby steps work better for me. πŸ™‚ Keep up the good work! I am so proud to be your sister! Love you! Liz

    • Good for you! I love that you are making green smoothies and running! Those two things alone will provide huge health benefits! And…I’m sure your Thai greens are just as good as American greens! πŸ™‚

    I know Im a little behind adding my thoughts here, but better late than never, right? Your Vegan Challenge was 100% of the inspiration that I needed to take the plunge into a healthier lifestyle. As you know, I had been learning about healthier living, trying to make small changes where I could, but unable to give up that tasty convenience food that our family had grown to love. When I heard about your Vegan Challenge I knew that it was just the push I needed. Your blog was very inspiring and here I am 7 weeks later and 15 lbs lighter, still eating a plant-based whole-foods diet and going strong! You have officially changed my life, Jackie. πŸ™‚ Thanks for sharing your blog!

    Over the past couple of months watching and reading the things that you have been posting have made me think a lot about what I have been taught( and really enjoy) to eat. Slowly I have made a few changes, like trying to decrease meat from three times a day to a few times a week, and really trying to eat real food instead of the processed stuff. Thanks to the smoothie idea it has also made it really easy to increase my fruit and veggie intake by huge proportions. You will probably never convince me to go vegan, but two months later and 18 lbs. lighter you have definitely helped me become healthier. Keep the great information coming, you never know who it will help.

    I have been walking the dog with my girls to school in the mornings then having a “green” smoothie! Great ways to start the day πŸ™‚ We try not to eat processed food but I have a little guy who loves hot dogs. We talked about it and are not buying them for a month to see if he likes other things too. He does like home made fish fingers! We eat vegetarian about twice a week, but with the fun recipes you have posted that I wanted to try we have been doing it closer to 4 times πŸ™‚ I love to read what you write, it is definitely inspiring! Love ya!!

    Hi, I just want to say that I have definitely been inspired by Jackie’s blog. I am not ready to go vegan nor do I think I ever will but I have made a lot of changes in the quality of the food I feed my family. We are eating more and more whole foods and steering away from all things processed. If we could go organic up here in the “frozen north” we would but we just don’t have access to affordable foods with our size of family. I would eventually like to cut out store bought meats and live entirely off of fish and moose that we harvest here but for now, we will just do what we can to be healthier and more mindful of what we put in our bodies. I love all the recipes Jackie posts and am excited to try them on my family. I have also really enjoyed reading her posts about discovering the vegan way and her progress in pursuing a healthier life. Thank you Jackie, I’m really proud of you.

      The more I learn, the more I realize that processed foods are the “bad guy” and should be avoided at all costs. So, you are doing more than you realize! I’m proud of you too! πŸ™‚
